Crémant de Bourgogne Brut cuvée « Perle de Roche »

Soil: The wine is made from a piece of « young » vines in the commune of Viré, clay and limestone soil, shallow limestone slab 50 cm deeper.
Vine: We provide the same care to this 45 years vineyard to develop our sparkling. Guyot cut to target 55 hl / ha, tillage and treatment with organic farming and biodynamic approved products early harvest for a base wine 11 % natural.
Winemaking: The grapes are pressed slowly decanted the wort racked cold then fermentation started naturally. Ageing on lees until spring before pulling the wine in the bottles for fermentation. The bottles are stored 24 to 36 months in the cellar for aging on lees. Disgorging in the winery, extra crude with a small dosage of 4 g / l.
We produce this wine every two years, about 3,200 bottles each draw.
Wine: fine bubble, understated but elegant nose with a nutty «chalky  » button. Fresh palate, savoury, refreshing with a touch of mineral stretching tasting to subtlety, finesse. To consume around 6/7 ° C
