Domaine Sainte Barbe

Viré-Clessé « Thurissey »

Grape: Chardonnay, part of chardonnay «Muscat»
Terroir: Located north of the appellation, the plot is gently sloping, south-east facing on a heavy clay soil depth (orange acid clay) and limestone surface.
Vine. The vineyard is 95 years old and produces very little, from 30 to 35 hl / ha. It is cut short, worked methodically, ground scratched to remove the grass until July, copper and sulphur treatments to fight against disease. The plot is 52 acres or 2 to 2500 bottles per year.
Winemaking: The grapes are squeezed slowly, the wort racked cold then intoned in Burgundian barrels, French oak for five years in average age, including a new one each year. Fermentation and aging on lees in barrels for one year. The wines are blended several months for a mass rearing before setting without fining or filtration.
Wine: The nose shows exotic aromas of yellow fruits, mango, and apricot. The palate is full, round, elegant finesse with great depth and minerality worthy of the great terroirs. A gourmet wine to keep 5 to 10 years or decant in his youth.
